The ingredients
Chop the onion and garlic
Fry the onions and garlic till soft
Slice the beetroot thinly
Add the beetroot to the onion and garlic and fry for a while
Add water just to cover and simmer till the beetroot is very soft
When the Beetroot is soft whizz it with whatever you happen to whiz with and add a good knob of butter and some double cream
Put it in a bowl and make it pretty just before serving
